« Beans and chickpeas or any form of legume, plus a little bit of meat (canned tuna, ground whatever’s on sale, chicken thighs, pork tenderloin, etc.). If you use beans as a starch, cut down on meat and add a bunch of inexpensive vegetables like celery, carrots, frozen peas, cabbage, potatoes, beets, onions, leeks, and sweet potatoes. It’s pretty healthy and won’t break the bank. My spice cabinet is well stocked, though; that makes a huge difference. »
