Rye, sourdough, sprouted grain, or French?” I’d just stand there, bumbling and stammering, wondering what happened to the good old “white or whole wheat” days. Then two things happened. One, I worked briefly at a bakery and picked up some insider knowledge. (As well as stole a few recipes.) And two, I got a bread machine — and honestly, it’s too easy not to use every single time I want bread. So no, I’m not a French baker or a bread expert. But I am finding my way, one homemade loaf at a time.
